1. Explain the process of the food preservation method used to preserve the food product.
Canning is the process of applying heat to food that’s sealed in a can in order to destroy any bacteria that can cause food spoilage. Proper canning techniques stop the bacteria by heating the food for a certain amount of time and at boiling point so the bacteria can be killed. During the canning process, air is driven from the jar and a vacuum is formed as the jar cools and seals. There are several ways to can food, one of these is Water Bath Canning.
The system of water bath canning is placing the filled with the contents you wish to preserve preferably high-acid foods, such as fruits, pickles including pickled food and tomatoes.With the filled cans submerge into a bath of water and they are then heated to an internal temperature of 100°C for a certain amount of time. Another method which is more suited to low acid foods such a meat, poultry and vegetables is Pressure Canning. In order to use this technique you need a pressure canner which is especially designed fro this preservation. This device uses high pressure steam in a locked compartment to can the foods. The filled cans are place in this machine and reach an internal temperature of about 115
°C under a specific pressure that is either measured with a dial or weight gauge. The following is an image of what a Pressure Canner looks like.
The preparation and sterilisation of the cans and canning equipment is very important as any mistake in the process will spoil that food and it must then be thrown out. You need to wash cans in hot soapy water and rinse well. Keep the cleaned cans hot by leaving them in hot water until you are ready to fill them.
